This is the “it’s too hot to even think about what to eat” salad, it’s super healthy and delicious!
Strawberry Summer Salad with Balsamic
Ingredients
- 1 cup mixed leaves
- 1/2 cup sliced strawberry
- 1 cucumber
- 1/2 red onion
- 1/4 cup Balsamic Vinegar
- olive oil drizzle
Instructions
- begin by washing all of your greens, strawberries, cucumbers and red onions.
- cut your red onions as thin as possible and add to a bowl of cold water (This reduces the sharpness of the onion)
- cut your cucumbers and strawberries
- assemble your washed and dried fruits and vegetables on a plate of choice and set aside.
- in a small saucepan over medium heat add your balsamic vinegar and reduce until thickens (carefully swirl the pan until thickens) add your pepper to taste.
- drizzle the thickened balsamic over your salad and your olive oil and enjoy!
