I can’t deny that I am a salad girl, if you’re looking into becoming one here’s where you should start 😉 it’s super delicious and if you’re not much of a chicken eater you can always eliminate the chicken and add sweet potato fries and follow the same directions as the chicken.
Hearty Salad with Za’tar chicken
Ingredients
- 3 small Chicken breasts
- 1 tbsp Za’tar
- 1 tsp sumac
- 1 tsp paprika
- Salt to taste
- Pepper to taste
- 2 tbsp olive oil for chicken
- 2 cups Lettuce of choice
- 1 Cucumber cut
- 1/2 cup cherry tomatoes chopped
- 1/2 cup corn
- 1/2 cup red onion submerge in water for 10 min
- 1/2 cup soybeans
- 1/2 cup olives
Dressing
- 2 tbsp fresh dill chopped
- 2 tbsp fresh mint chopped
- 1/4 cup olive oil
- 1 clove garlic minced
- 2 tbsp Pomegranate molasses
- 2 tbsp white vinegar
- 1/2 large lemon juice
Instructions
- Note if you’re using an oven preheat to 180°.
- Begin by washing your chicken breasts (I usually add them to a bowl and mix equal parts water to white vinegar and allow it to sit for a few minutes and then rinse the water off) pat dry your chicken with a paper towel and crush some fresh pepper on both sides and cover with olive oil.
- Mix your za’tar, paprika and sumac and sprinkle on both side making sure to cover every bit of the chicken breast.
- Add your chicken to your airfryer or in to the oven for 20 minutes.
- Mix all of the ingredients listed under dressing.
- Assemble your cut veggies , add your cooked Za’tar chicken and add your dressing.
