Keema (Libyan minced beef with egg)
Ingredients
- 1 kg minced beef
- 2 tbs olive oil
- 1 chopped medium onion
- 2 chopped tomato
- 1 tbs. Salt
- 1 cinnamon stick or tsp cinnamon
- 1 tbs Libyan hararat 10 spice mix, you can substitute with 8 spice mix
- 1 tbs chili flakes optional
- 1 tbs chicken boullian
- 1 cup water
- Pinch of cinnamon powder for garnish
- 1 cup chopped Parsley save a 2 tbs for garnish
- 2-3 eggs
Instructions
- In a saucepan on low-medium heat , add your oil, sauté your onion and garlic. Add your minced beef, all of the spices and parsley.
- Add your tomatoes and a cup of water cover and allow to cook for 30 minutes, occasionally stirring (if the water evaporates feel free to add an additional 1/2 cup). The longer you allow the meat to simmer then tender it becomes and more flavour is released.
- Remove the cover, move the meat aside creating a crevasse, crack the eggs in each hole you’ve made and cover. Turn heat down lower. Allow to sit for 5 minutes.
- Remove cover, sprinkle cinnamon powder and parsley. Traditionally we eat this meal with fresh bread.
