This is a “throw everything in one pan/dutch oven”, pop it in the oven and forget about it for an hour or so the type of dish. Super delicious and easy to make! It’s also a very lenient recipe as you can use any vegetables you like and omit any that you don’t like. The spices may seem a bit heavy but trust me they work so perfectly together.
How to make a one-pan chicken stew
Ingredients
- 0.5 kg Chicken I used boneless chicken thighs, you can use any protein of your choice
- ½ Chopped Onion
- 1 cup cut potatoes
- 5 large cut okra optional
- Cherry tomato vine
- 4 sliced Sweet peppers
- 3 whole garlic cloves
- 1 Cinnamon stick
- 1 large dried bay leaf
- 1 tbs Chilli flakes
- 1 tbs Turmeric
- 1 tbs Paprika
- 1 tsp Dried mint leaves
- 1 tsp Oregano
- 1 tsp Cinnamon
- 3 Cardamom cloves
- 1 tsp Coriander seeds
- 1- pint chicken stock
- 2 Chili peppers optional
Instructions
- Preheat the oven to 350F
- In a large pan or dutch oven, simply add all of the ingredients together. Make sure every ingredient gets coated in seasoning, especially the protein.
- Add your chicken stock, cover the pan with foil, and pop into the oven for 60-70 minutes.
- Remove foil and leave it in the oven for 10 minutes for the sauce to thicken and the chicken to get a nice char.
- Eat with bread or a side of rice or just simply alone. enjoy!
Notes
Use one part of water with 2 tbs of vinegar to clean your chicken
