Semolina bread
How it’s traditionally made in our Benghazi household ☺️
Ingredients
- 1 cup fine semolina
- 3 & ¾ cups flour
- ¼ cup olive oil
- 1 tbs instant yeast
- 1 tsp sugar
- 2 cups warm water
- 1 tbs salt
- 1 tbs Black sesame seeds
- 1 sesame seeds
- 1 egg for the egg wash , add a tsp water to loosen
Instructions
- Preheat oven to 200°
- In a medium/large bowl combine your dry ingredients, then your wet.
- Mix until the flour is formed into a ball.
- Remove from the bowl, add to a dry/clean service (add a few drops of olive oil) and begin to knead your dough. It might seem sticky/wet but continue to knead it with your finger tips until its homogeneous. (This took about 10 minutes)
- Add olive oil to the bowl and transfer your formed dough back into the bowl, add a tablespoon of olive oil on top of the dough , cover and allow to sit for on hour or until doubled in size.
- Remove your dough and transfer to a clean surface, cut dough into two equal parts, flatten (optional cover again and allow to rise for 15 minutes) with your finger tips, add your egg wash and sprinkle your sesame seeds.
- Into the oven for 40 minutes or until golden and brown on top and bottom. Best enjoyed with warm soup👌🏽
